Myra’s Morsels
Posté par Marie Reynolds leMy very dear friend and client Myra has been experimenting with the supplements and created some wonderful protein balls and flapjacks. She has been kind enough to share her recipes below for you to enjoy!
Myra’s Flapjacks.
Break open 4 caps of Eradic8
2 cups oats
I/3 cup pea protein
I cup of nuts
1/2 cup dried fruit
1/3 cup of mixed seeds
Mix all together in large bowl
200 g butter
1/2 cup golden syrup (or honey ) syrup gives it a richer gooey taste yum
Pinch of salt flakes
Melt butter add syrup / honey and salt add to dry ingredients. Stir to coat and combine ingredients .
Turn out into an oven proof pre plied dish of your choice, if you want thick and chunky or thinner types the type of dish you use will dictate this . You must pack down the mixture tightly so that the flapjacks mould together and can be portioned .
Cook in a moderate heat oven until golden (25/30mins)
Allow to cool for a about 7 /10 mins and score into your required portion size then leave to cool completely.
Dark chocolate can be melted and dribbled or spread on top .
You can use any combination. Of nuts , fruit and seeds it’s your choice
Myra’s Protein Balls
3 Caps Evolve or Eradic8
1/2 cup pea protein
1/2 cup desiccated coconut
1/2 cup ground almonds
1/3 cup seeds pumpkin / sunflower
1/3 cup flaxseed
3 LG spoons peanut butter ( pip @ nut is the best )
Tspn vanilla extract
Good squeeze of honey
A couple of grinds of sea salt
Dessert spoon of Cocoa
Taste adjust to your liking. You can add dried fruits , nuts , ginger all you need is to get the consistency right to roll your balls.
Myra’s Savoury Muffins.
To make large 12 muffins these are quite substantial
3 capsules of Catalyst
5 cups of self raising flour
4 large eggs
2 cups whole milk
500g melted butter
I cup natural yoghurt
2 cups sun-blushed tomatoes ( or cut baby cherry tomatoes in 1/4 drizzle with balsamic, olive oil sprinkle with thyme and a little rock salt and roast on a tray in oven about 30 mins )
1 1/2 cups roughly crumbled feta
1/2 cup chopped basil or 2 dessert spoons of pesto
2 cups of thawed and well drained spinach (you can use fresh but I find this has more flavour)
METHOD
Set oven at gas 4 / electric 180
Get 2 x 6 ( if making 12 ) deep muffin tins place tulip muffin cases in them , and spray each muffin case lightly with oil ( very important as this stops muffins sticking to case )
Sieve the flour into a large mixing bowl and break the Catalyst capsules into the flour discarding the outer casings , stir in.
In another bowl beat the eggs. Add the butter, milk, yoghurt and mix together . Leave to one side .
Add to the large bowl containing the flour the tomatoes, spinach (try to sprinkle and separate as you add) .Now add the basil and crumble in the feta.
Stir this in to the flour lightly so all ingredients are coated .
Make a well in the centre pour in the egg and butter mix , stir lightly just enough to mix all ingredients ( if you over stir at this stage your muffins will not be light and fluffy)
Divide evenly as possible into the prepared oiled cases
Finish off with a few twists of salt and pepper and/or freshly grated Parmesan
Bake for 30/36 mins oven temps may vary .
Best served warm with a little butter if required
I have used my supplements many times in cooking (I use Calmeric a lot in savoury dishes) I also posted a while back in how you can incorporate the supplements in cookies. Just look for a general cookie base, if you are gluten free than use appropriate ingredients. Then simply add whatever additions you wish. I included the following combinations: ( I do not measure a thing – not as organised in cooking as Myra but I have just written combinations I used)
Meno Morsels – 2 Yve Capsules emptied along with walnuts, dates and maple syrup
Tummy Tamers – 2 Eradic8, coconut, cocoa and raisins
Super Chargers – 2 Evolve, teaspoon Repair +, pistachio and pomegranate
Calming Cookies – 2 Calmeric, ginger, agave and hemp seed.
Beauty Bites – 2 Coll-Force, 1 Vegan C, coconut, cherries and cocoa
Mood Morsel – 2 Focus, dried mango, agave and coconut
Immune bites – 2 Defend, dried apricots, hemp seed, agave
